Once I saw this, I knew I had to make some. Frank doesn’t like apple pie (?!) but I do, and this is the perfect size for me. It would also work really well for kids helping you bake other pies.
8 apples and a two-pie crust recipe made 16 mini pies.
The only thing I did differently is that I found it much faster to roll out strips of dough for the sides, and cut out circles for the bottoms. Way easier than just pressing dough against the sides, which I found time-consuming and irritating. You can easily cut the strip the right width by laying the jar on its side on the dough.
I had to try one, of course, and baked the first one while I assembled the rest. It puffs up about an inch above the glass jar. It slipped right out of the jar with just a little jiggling around the edges with a knife. It’s the absolute perfect size for an afternoon snack with a cup of coffee or a dessert. I liked it so much that I bought two dozen more jars, in the 6 ounce size as well. I think I’ll make some meat pot pies with them.
But what a great way to use up bits of fruit and meats and things that aren’t really enough for a whole pie or recipe. Plus, aren’t they adorable?
