Fry up some bacon, remove from skillet.
Dice up two potatoes, toss in bacon fat, sprinkle with coarse salt, spread out on a cookie sheet, and roast in the oven at 400 degrees until crispy and delightful.
Meanwhile, dice up a dozen Brussels sprouts, a bell pepper, an onion, some celery, some mushrooms. Toss those in the bacon fat and some coarse salt and get them into the oven.
It usually takes about 20 minutes for everything to get all roasted and lovely. I like it a little dark around the edges, actually. Tasty, tasty stuff.
Poach the eggs a few minutes before it’s all done, because what’s not better with runny yolks, right?
