My favorite way to use up left-over rice is to have it for a sort of breakfast fried rice the next day.
I fry up either bacon or breakfast sausage, add in onions, mushrooms, bell pepper, sometimes broccoli or spinach. Then add in the left over rice. The batch I made last night was really tasty, and all I did was use a great batch of wild mushroom stock I made and canned about a month ago with brown rice. (Delicious!)
Then serve it with a couple of perfectly poached eggs. Yum.
I never thought of rice as a breakfast food before, but man is it good with runny eggs.
