Everyone has a family meatloaf recipe, right? Here’s mine. Simple, bulletproof, tastes like home to me.
1 pound ground beef
1 pound ground pork
1 small onion, diced
1 small red bell pepper, diced
2 ribs celery, diced
1 cup diced mushrooms
1 cup oatmeal
2 eggs, beaten
1 splash Worcestershire sauce
1 teaspoon salt
1 teaspoon black pepper
1 tablespoon fresh sage
1 teaspoon fresh rosemary
1 tablespoon fresh oregano
Mix it all together and put into a greased bundt pan. (I like to use lard to grease the pan.)
Cook at 350 for an hour. Flip onto plate, then put back under broiler for a few minutes.
I almost always serve with mashed potatoes and gravy. I find it easy to bake the potatoes as the meatloaf cooks. Today I also had some pea greens that I steamed with just a bit of butter and salt. Yum!.
